The calisson d'Aix is a sweet treat that has existed since the 19th century. The calisson maker prepares the calisson paste by mixing candied melons, candied orange peel, candied fruit syrup and blanched and white almonds. Maison Léonard Parli is the only one to still preserve its fruits to prepare the calisson paste: a guarantee of quality and traceability. This delicious, unique-tasting dough is placed on a thin wafer sheet and covered with a very pure white royal icing.
At Léonard Parli, the use of a traditional machine with its large granite rollers makes it possible to obtain a beautiful calisson dough rich in taste, which preserves the texture of all the ingredients.
Maison Léonard Parli was founded in 1874. The company was taken over by the Gignoux family in 2018, who strive to respect and promote the historical know-how of the PARLI Manufacture.
